Because our species is adapted to living on the ground. Unlike monkeys, our closest group of relatives that retains that feature, we aren't arboreal. We don't need a prehensile tail because we're not arboreal. We don't usually end up in situations where using a tail to balance would be useful either.

What I'm wondering is why we thought it would be a good idea to get rid of the opposable feet...

A very small number of people are born with "tails", but they're always just extra flaps of skin. There's no bone or anything in there that would make them act like a tail.
